Many species of fungi around the home grow on food and other organic materials such as damp paper, textiles and wood. Fungi produce allergens, enzymatic proteins, toxins and volatile organic compounds that cause respiratory disease. Various strains of airborne molds have been implicated as the cause of asthma and hypersensitivity pneumonitis.

The fungi (singular, fungus) include several thousand species of eukaryotic, sporebearing organisms that obtain simple organic compounds by organisms have no chlorophyll and reproduce by both sexual and asexual means. The fungi are usually filamentous, and their cell walls have chitin. The study of fungi is called mycology, and fungal diseases are . The interactions between spoilage of food and fungi have been described by Pitt and Hocking () and Samson et al. (). Prior to spoilage the fungi can be present on or inside the crop in low numbers or as survival structures. Spoilage fungi are also introduced to an empty habitat when the food is treated by pasteurisation by:
